Sharing the love

I had four women ask me for this recipe yesterday, and someone else in the comments this morning.  So, crock pot lovers, here we go.

Tangy Barbecue Chicken

1 broiler/fryer chicken (3-4 lbs) cut up - my kids prefer chicken breasts so I used that instead of a whole fryer, about 6 
1 medium onion, thinly sliced (you don't have to use a whole one if you have onion haters)
1 medium lemon, thinly sliced
1 bottle (18oz) barbecue sauce (I used Bull's Eye "Sweet and Sticky")
3/4 c regular cola

Place chicken in a slow cooker.  top with onion and lemon slices.  Combine barbecue sauce and cola.  Pour over all.  Cover and cook on low for 8-10 hours or until chicken juices run clear.  Yield 4-6 servings.

I will say that when you use a whole broiler/fryer as opposed to breasts only, there is more fat in the sauce.  If you don't like that idea, definitely use breasts.

Thanks for sharing your recipe, Kim. It sounds great! I make something very similar to this, but w/o the cola. A tip for those who like dark meat, but not all the fat that comes with it: after the chicken is cooked, remove the meat from all the fatty liquid, put on a baking sheet, spread w/ a little more bbq sauce and put it under the broiler for a few minutes to brown. The bbq sauce caramelizes, giving you a nice bbq flavor without all the fatty liquid. This works w/ crock pot ribs too.

That is such a great suggestion, Rosemary! I will try that next time. My daughter loves the dark meat.
